Up until recently there were two words that did NOT go together: Boudin, as in the spicy south Louisiana sausage, and Kolache, as in the very European pastry filled with fruit or mincemeat.

When Czechs brought the treat to the U.S. via Texas, Kolache took a turn from fruit to the baked roll and sausage-sized wiener we now know and love so well. Local food blogger and general-lover-of-all-things-edible Chris Jay has discovered a truly wonderful kolache at downtown’s newest bakery at 500 Texas St. In his blog, Chris waxes poetic about Retro Baking Company’s Boudin Kolache and their more traditional pig-in-a-blanket, too.  If neither of those strikes a chord, you have other choices: jalapeño, cheese, ham, egg or Gouda, onion, sausage, egg, cheddar, or sausage, egg, pepper-jack.

Read Chris’ blog and we think it will be just a matter of time before you’re visiting 500 Texas and  noshing on a Kolache, cinnamon roll, piece of King Cake or other of the daily fresh-baked Retro Baking Co. treats. By the way, the bakery is open 7 am- 3 pm M-F and 9-2 on Saturday. If you come in and no one is around, that means that Kandie is in the back, baking. Just say ‘hello’ and she will pop out to see you.
