If you’ve driven past the old Arlington Hotel on Cotton Street recently, you’ve seen the evidence of all that is going on inside, and it’s a-plenty. The Every Man a King Distillery is making solid progress though the opening date has -wisely- been set for summer 2020. Anyone who has ever rehabbed a challenged (and challenging) historic structure knows that only one thing is a certainty- you will be faced with a series of what former Secretary of Defense Donald Rumsfeld called ‘unknown unknowns.’
